I love chocolate. Dark chocolate. The darker the better. My favourite, anytime dark chocolate bar, is the Extreme Dark Chocolate by Endangered Species Chocolate. At 88% coca content it is just right. In my mind, the perfect balance of flavours. of course, when I can't get my big mitts on one of those bars and I'm craving a good chocolate, 75% will do in a pinch.
Recently I discoverd the 99% (minimum) cocoa content bar via Lindt. This was an experience I was going to savour on a Friday night, but totally forgot about until my little brother (another dark chocolate lover) and his girlfriend came over for a night of homemade thin crust pizzas and tv. Once the taste of dinner had left our mouths, I opened the package placed a square on my tongue and let the chocolate melt. I have to admit. My first reaction was to quickly chew and swallow the little bitter square of cocoa in my mouth. The flavour is intense and nothing like what I was expecting (granted, I wasn't totally sure what to expect to begin with).


Since then I have had two more squares and I enjoy the intensity more with each taste. I don't think this will be a regular chocolate purchase for me. Like good scotch, I will reserve it for special occasions.
